Oven Roasted Radishes

This was the first time I’d ever tried roasting radishes, but it won’t be the last. In a word, they’re awesome

There's hardly a recipe to follow here, but trim radishes and cut them in half, then spritz with a little olive oil and sprinkle with a salt and pepper.  Place them cut side down on a half sheet pan and roast in a hot oven (400-450F) for 10-20 minutes or until the cut side starts to caramelize. 

Set a tray of these on the counter and watch them disappear!
