Roasted Acorn Squash Rings

Here's a simple and delicious way to prepare acorn squash.  For easy clean up, roast the sliced squash on a silpat or parchment paper lined sheet pan.

Oven Roasted Acorn Squash Rings

Ingredients

  • Acorn Squash cut into 1/2-inch rings, seeds and membrane removed.

  • Olive Oil

  • Salt and Pepper 

Directions

  1. Preheat oven to 400F.  

  2. Place prepared squash on parchment or silicone lined sheet pan.  

  3. Spritz with olive oil and sprinkle with salt and pepper.  

  4. Roast in a preheated 400F oven for 30 minutes, turning squash over after 15 minutes.
