Keto Waffles
makes 2 servings
Ingredients
1 large egg
2 tablespoons salted butter, melted
2 1/2 tablespoons unsweetened almond milk
1/2 teaspoon pure vanilla extract
1/2 cup finely ground almond flour (or meal), sifted
1 tablespoon confectioner’s erythritol (like swerve)
1/4 teaspoon baking powder
Directions
Preheat waffle maker (a thin waffle maker works better than Belgian-style for this recipe).
Place all the ingredients in a high-speed beverage blender and process for a full minute.
If needed, brush the waffle maker with a little oil or clarified butter; pour half the batter into the preheated waffle maker and cook until golden brown; repeat.
